Don't exchange it in Australia, you'll lose way too much with the terrible rates you get here. No need to change to US$ as you'll just lose again in the multiple exchanges. Take Aussie dollars with you and change it as you need it over there, keeping the rest in a hotel safe deposit box.
I can't give advice on the best places to exchange in Bali though, as I just use the ATMs.
