First make sure your own mobile phone is unlocked, use someone else's sim card from another company, if it works it is unlocked, if it doesn't then you will need to contact your phone company to get it unlocked.
Write down all the numbers of friends/family that you may want to contact whilst on holiday.
Once in Bali remove your Australian sim card and put the Bali sim card in. Use the starbutton plus 123 and hash to check your available credit.
Add your phone numbers in if need to, some phones keep the numbers in. For sms to Australia mobile drop the zero and add the plus sign and 61.
SMS is much cheaper to do than phoning.
