A good place to go hiking is the Munduk area. Its about an 90min drive from Sanur, but there is accommodation for over night stay if you choose. Check the archives on here or perhaps do web search. If you do a web search for waterfalls in Bali there are many beautiful places to explore. I am unsure what hiking is available around Sanur, I think only street/beach walking available.
