We always stay in Ubud at the Tjamphuan Hotel for at least 3 nights. Restaurants are very good in Ubud, go to the dancing performance one night, you can hire car and driver to take you sightseeing to areas around Ubud, and shop at the market - quite an experience for a first timer! Then we go to a beachside hotel in Sanur. We find the best prices are packages, booked through travel agents. Check the hotels' websites, before making your final choice.
