I've booked direct with Garuda the last few trips. Just ring their office (phone numbers are in the phone book for your local Garuda office). They've always taken the booking over the phone. They email out the details with a payment form.
Not sure what you mean by flexible - is it payment methods or timing you're referring to? You can pay bank deposit, credit card or I think you can even mail a cheque if you want, and just fax or post the form back to them. As for timing, it all depends on what fare you book. Usually the sale fares have to be paid within a fairly short time frame, generally within a couple of weeks of booking.
