However, the only possible justification for an official to remove an opened bottle of alcohol would be to ensure that the cap was firmly in place.
Leaking spirits into the hold of an aircraft is probably not ideal, and there are certainly "laws" in place that govern this.
It may help to ensure that the cap is tight, and perhaps even a supplimentary seal (tape?) or plastic bag etc just to appease any scrutiny.
As others have said, don't give them any reason to dispute the carriage of the spirits and stand firm if challenged.
