you need to be in Bali for at least 10 days prior to the wedding. A reputable wedding coordinator should be able to arrange a waiver of this time.
When I was working as a wedding coordinator, we had a number of couples come to get married without any prior arrangements - sometimes they were on a holiday to get away from the future in-laws who were bickering over how the ceremony would unfold!!!
It is very possible to do, particularly with a wedding coordinator, and I think you'd be surprised at the cost.
