Traditionally, Indonesians use fresh virgin coconut oil for cooking. It will depend on where you eat, but many still use coconut oil, which is made locally by squeezing the coconut flesh.
While saturated, coconut oil is possibly the only oil you should eat if you are t2 diabetic. It is well documented that virgin coconut oil can be used to regulate blood sugar, you can even buy it as a supplement for diabetics.
If you get a chance - try it - it beats olive oil hands down for asian type cooking.
