you will not have a problem finding skim milk- though to save you having to go out and look for it why not take some powdered skim milk along -I do this with soya milk. Both are available there but not always when you want them.You can make them up as required and most places will keep then in the fridge with your name on them if you are not somewhere with a fridge.
Olive oil magarine may be more tricky though probably available. My suggestion again is to take a bottle of olive oil (or plastic container wrapped well in luggage) and a small container- olive oil solidifies when refridgerated so if you have your won fridge do that or again ask athe the hotel for it to be kept in the fridge.
You can add herbs, salt etc before you go. it may not look as good as the margarine you buy but is essetially the same. You can also just spread olive oil on toast, bread etc -just as nice anyway.
The bread you can get but will need to go to a supermarket /baker adn check them out. remember that with the humidity bread gets mouldy quicker than here so agiant eh fridge or buy in small quantities.
If you are in Ubud there are a few organic places that do excellent stone ground breads and have olive oil though cannot rmember about the magarine.
re frying a lot is done in peanut oil though palm oil is used. You will need to be more selective.
