If you really like the Dynasty, go there, if you can get a decent price that is! We've stayed 3 x and stayed in the new Studio room at Xmas which caters for 3 kids easily. They've also just opened up the new family garden/pool view rooms which cater for the same. A set of bunks and a trundle. We have 3, 5, 15 and fit in comfortably.
It is a problem with 3 kids and most hotels(not all) you will have to get 2 rooms which means a Dynasty family room MAY work out economical for you. Others we've stayed at are Patra, Jayakarta, BGH and whilst kids had a good time at all they didn't have the activities/water slide/pool games etc etc.. that Dynasty has.
I would have thought either holidays ok. Don't really know when to book, maybe they start advertising for June in Oct/Nov?? (could even be earlier).
Spending for 7 - 10days for us would be about 2K I reckon. Really depends on how much of the sightseeing things you want to do.
Safari Park entry - ~US175, Zoo - US80 - 100 maybe. Whitewater rafting etc..
