You HAVE done your homework.
You won't be doing too much if you have your planned days off inbetween activity days. I have done this with my boys for years and it works well. I had a laugh one trip when I ("tour director") had not planned anything. They went into shock, didn't know what to do with themselves then whinged days later that they weren't doing enough. So yeap, 2nd daily activities are a GREAT idea.
You're right not to bother with Waterbom after being to W'N'W a few times.
When in Ubud a visit to the Bird Park (half way to coast) would be worthwhile. The Kecak dance is the most entertaining. The ridge walk, starting at the north end, is beautiful. Of course there is the monkey forest and to the left of it the Tropical View cafe has a wonderful outlook over 10 acres of rice paddies - food is good and cheap. Another excellent outlook is form the Cahaya Dewata Hotel.
Don't carry wallets in back packs, unless they are buried in the bottom next to the carriers back - too many times I have heard of people having their wallets taken from them. Money belts can be uncomfortable and are overkill for some spending money. Which leaves you with deep, or cargo, pockets, or across the body, bags for girls.
I'd do exactly the same as you are doing for money.
Unless your family is prone to gastric upsets don't worry about the BB too much. If you do want to take something that is PROVEN to work, then check out Travelan. It won't protect you from everything that could give you BB but its a start.
Hubby got BB last trip and got an injection. I was surprised to see it was only Buscopan (for spasms) not an antibiotic, but it did the trick along with more tablets of the same and antibiotics. It all depends on which BB you have as to what the course of treatment is.
I'll be catching up with my sister over there in June, for the fourth time. It works so well because you are relaxed, close but still have your own space and plenty of places to escape to. You WILL have a ball.
