1. I would not bother with VIP VOA but if that's your choice scroll down the page/search as there has been a lot of info lately on the subject.
2. If the hotel transfer is free, then why not use it.
3. If the coach does not arrive etc, the airport taxi window is to the right as you exit after customs.

Best taxi to get off the street once you are at hotel are the light blue ones - Bluebird. Rate will be from the meter
4. How much you barter down will be dependent on how high the start prices are. As first timers you will probably find they are quite high as locals have a knack of picking out regular visitors or not :)
Perhaps search the archives for a general idea of prices
5. Markets , yes bargain & some smaller shops.
Restaurants..no
Food yes if buying from a market.
My advice look through the archives to give yourself some general background info before you go.
