Obviously you are a selective reader.
Nothing wrong with my stomach, never has been. Why would you assume I never eat in traditional stalls, kaki lima etc. Some of the places I've worked/lived at, there has been no other option.
As I said above, eaten everything from everywhere over the years and seldom (very seldom) eat in restaurants, (I'm a better cook than a lot of the "chefs" around town).
By the way, the chicken processing/slaughterhouse staff wear hats, masks, gloves, boots, and the water comes through their filtration plant prior to use. To boot, the chicken is very reasonably priced.
Water.... it comes from the tap in my house, cooking, drinking et al.
Ayam kampung? Yup I know quite a bit about ayam kampung, much preferable to your old broilers, just the same as celeng Bali is much preferable to celeng Australie.
I suspect you've never been beyond Bali in your Indonesian experience, though you do appear to excel at being a bitter vetch?
