There are always cheap budget places to stay that you don't need to book for. There are hundreds of homestays in ubud to choose from. I think I have replied to you in previous posts to suggest Dewa Bungalows in hanoman st, a taxi will be able to find it. Rooms are nice and 100,000rp, if you are not happy you can always move the next day.
And no I wouldn't bother with sheets, I haven't been to Java but have ventured to Lombok and Sumbawa and never had bad sheets.
