We once got a hotel babysitter in Singapore but our children weren't comfortable being in a place they were not familiar with and left in the care of a stranger so we never repeated that. Having said that I admit to being over anxious where my children are concered and I have never had a sitter at home either.
Our friends used to take a stroller out in the evenings and their child went to sleep quite happily while the parents ate. Mosquito netting would be a must if you were to do this. You may need good navigation skills to get over some of the holes in the pavement in Bali though. It has been suggested on this forum to buy a cheapish stroller and leave it behind.
Where our children are involved we have tried to make sure we are back at the hotel early in the evenings so they could sleep. As you are doing we try to make sure we have a room with a balcony or a room very close to a sitting area where we could have a drink or two while still close or within earshot of the room. I'm not familiar with Ubud hotels in your price range but others might be able to suggest some that would suit.
It may sound difficult and yes, you do have to take a lot into consideration, but in my opinion the pleasures of travelling with children usually outweigh any difficulties you may encounter.
