First check that your mobile is not locked, do this by taking out your Australian Sim card and trying someone else's from a different carrier, eg. if you are Optus try someone's on Virgin!
If their Sim card works in your phone then you can use this phone in Bali.
In Bali go to one of the many stores around that sell Sim cards, they will sell you a Sim card with credit on it and set it up in the phone for you. You may have to have your passport with you for registration, I did but not sure if this is still the way things are as I haven't seen that mentioned on here in a while.
Once you have the Sim card in you will be able to sms at very little cost and even phone direct at a fraction of the roaming costs.
I always take a list of the numbers I may need to put in my phone as sometimes the phone loses it's memory, I have an antique mobile for Bali use only!
To phone/sms Australia you drop the first 0 and add +61 to any of your numbers.
Hope I have explained that all correctly.
