I agree with you about Phuket and would put Koh Samui in the same situation.
I did really enjoy Hua Hin in Thailand, although it is a bit of an overland hike to get there, or was when we visited. Probably two of my tops would be Vietnam (Hanoi, Hue or Hoi An) and we found the same wonderful laid back and friendly nature in Semarang, Yogyakarta and Badung. Yogya and Bandung are reachable via a beautiful train journey.
