Just being up in Ubud after the last tour bus has left is a lovely place to be. Ubud at night has a nice, relaxed feel to it.
Mozaic as mentioned below is a lovely restaurant but way, way expensive at well over AUD200 per head including matching wines if you go for the 'Chef's Surprise Menu' and in my opinion not worth the spend.
If I was going out for a special night with lovely ambience (without breaking the bank) I'd go to Bridges.
It's a multi-levelled place on the side of a ravine overlooking the river and the old Dutch bridge. Really nice food and classy set up with a cocktail bar and a terrace with really nice views.
A 4 course meal with cocktails and wine should easily come under AUD70-80 per head. A nice place for a bunch of young girls to kick off a stay in Ubud.

Not huge on nightlife in Ubud.
As already mentioned, Cafe Havana is a fun night with salsa dancing and good food.
Jazz Cafe is fun also with live music.

I would just go straight to Bridges, have a cocktail or two on the terrace, dinner and then get your driver to drive you back into Ubud central (a 15 minute walk otherwise) and just walk down MF Road and Dewi Sita just soaking up Ubud at night.
If you see something half lively, just pop in for a drink.
