I get the butcher to vacuum seal it, freeze it, put it in a 6 pack soft esky with an ice brick and put in checked luggage, I fly from Melbourne and it is always still frozen when I arrive.
I declare but customs have never checked, let alone read my declaration!!
I also take brie cheese, dips, salami etc and also declare.
