I have witnessed a guest giving a generous tip to a waiter, indicating it was to go to the musician, only for it to disappear into the waiter's pocket and re-materialise as a much smaller denomination. I pointed this out to the musician (my partner) and he said it happens all the time... in fact, he is aware that, at times, he doesn't get the tip at all. But he is a gentle soul and so says nothing. So - you're correct.. the tip does not always go to the person who deserved it. Better to give it to the person directly where possible.
