My son is Gluten intolerant and if you have celiacs you have some serious issues.

My son doesn't die for Gluten just ends up sick.

1st contact the Coeliac society in your state - mine in WA has great info about past members that have been to Bali. Where to eat etc etc

We stayed at the Aston in Tanjung Benoa (for three days) and they were fantastic met with the pastry chef etc etc they went out of their way to help us as did other small locally owned hotels. BUT a large Aussie run place in Kuta didn't want to know - a certain town houses

What he tended to do was to order meat and veg and separate sauce and then he could choose to leave the sauce.

As to food being prepared totally separate from gluten - I'm not sure where you might get that............and my understand of a true Coeliac that's what you need.
