Book tours on the street or with your hotel tour operator once you are there because your $$$$ are available to any operator at the time they will negotiate a great price for you and don't be afraid to ask,also you can ask questions etc. I can't speak about the cooking class as I have never been I guess would be the same unless you want a particular one, hope that helps.
