The food isn't actually cold. It's just not eaten as it's cooked so it's not hot. It's kept in covered dishes but it sits for a while. Much like the food I've had at padang restaurants, and also at a Balinese wedding where it's cooked in advance and served at room temperature.
Still very tasty but not hot off the stove.
