Rockin Robin has made some good suggestions.
The real advantage of being in Ubud is that you're closer to all these things. You've got a good 90 minute head start on all those from further down south which means you can travel even further afield.
I can recommend a bicycle tour with Bali Go Bike (you can probably negotiate Rp250,000), and for the very first time (I'm there next month) I'm going to participate in an Ubud Cooking class.

Or do what I do on my alternative relax day in Ubud.

Get up, have breakfast and loll about on your balcony reading a book until about 10am.
Walk the streets around Ubud and have a nosey in some shops (being sure to also visit a cafe) until about noon.
Back to the hotel (Tegal Sari in my case) for a dip and have them deliver Pizza Bagus poolside with a large Bintang (or two) in an ice bucket.
Back to the room for a bit of a lie down and/or read some more of your favourite book.
Hit the streets again about 3pm and have an hour massage.
Back to Ts about 5pm, sit on your balcony with a bit of duty free on ice and watch the sun go down over the Monkey Forest.
Then slowly get ready for dinner (with a bit more duty free on ice)at one of these places,

Cinta Grill
Terazo
Cafe des Artistes
Siam Sally
The Pond
Warung Enak
Bridges
Il Giardino
Kafe Batan Waru

Ahhh......happy days.
