Glad to help out.
I'm in Brisbane so our wether isn't so different; I'd recommend you look for:
Phalaenopsis - will enjoy the cooler months, mine is just putting up a flower spike
Vanda - although they are highly tropical they'll survive and can be spectacular when they eventually flower
Dendrobium - so many different kinds and some will be OK. Australia has a number of native ones too
Oncidium - Golden Shower is the most common and again mine are all spiking and will have masses of golden flowers in about a month. Originally from Sth America but all over the place in Bali (like Franjipanis, which the Balinese have adopted as their own)
Cattleya - personally I hate the damn things as they are too flashy and gaudy. Also from Sth America highland regions and often enjoy some cold time.

Indonesia has some seriously cool species Cymbidiums too but I doubt you'll get any in flasks. Make sure you look out for them at home though as some of the best (hybridised) are here in Australia.
Oh yeah - Paphs (Paphiopedilum) will generally do well in Sydney and also available here rather than in Bali.

Lots of other more obscure genera will do well but these are all relatively common ones you are likely to find.
