I think the thing I noticed since 2000, when we went for our honeymoon is the change in restaurants. There's lots more 'Western' style places now - gorgonzola would have been rare then (let alone '87 when I first went!) but now you've got a great range of different styles and most of it really well done. Generally the prices are cheap compared to Aust, although there are a few places that are around the same - but you get much better quality!
Lots more up-market shops up into Seminyak - not cheap but really interesting clothes, jewellery and homewares you won't see at home.
And ATMs - lots around, I use the Commonwealth Bank ones cause they are usually in their own little booth.
But it still smells the same - I love that first breath when you get out of the plane!
