If you do a search in here or on the net, you will find there are many companies that do it. There have been some good reports in here about Bali Bike Bike Tours. Most of them do a similar tour and the majority of the tour is down hill.
We did one last month and booked our trip at one of the tourists booths on the street. It wasnt a "big" well know one, just a small local lot just starting up.
We were picked up from our accommodation @ 8:00an and dropped off at approx 6:00pm.
We stopped at a food and Lawar coffee place for tasting and then to the volcano for breakfast. After breakfast we hopped onto the bikes at the top of the hill and the ride was wonderful - almost downhill the whole way, on a quiet back roads, thro little villages, rice fields and country life. We even stopped to visit a temple and also a local family compound.
The views and photos on the trip were absolutely spectacular.
Hardly had to pedal at all and in some parts it was all hands on the brakes. Towards the end, when the strenuous hilly part started, I just said I was happy to go the rest of the way in the support car and admire the views. A fun day was had by all and it was great fun meeting and racing the others in our tour.
My one and only negative was the seats on the bikes are narrow and some of our group got sore rear ends :(
