Hi. I have never been on a cruise ship but because they call into many ports in different countries then maybe they have a money changer on board. Maybe contact the cruise company & see if they do. That will save any hassles getting to a money changer here in Bali & more time for shopping.
As others said, I wouldn't get USD in Australia. It will cost you more in the end.
