I know it's a difficult decision but personally, I would use the DEET stuff in the morning (when the dengue mozzies are out) and switch to natural for the rest of the time and just try and keep your baby covered up at night time when you're out.
I think a bit of DEET is better than the risk of Dengue after seeing my friends' babies and kids in hospital but that's just me....
The mosquitoes aren't as bad in the drier months but unfortunately Bali's weather has been unpredictable the last couple of years and we haven't had a dry season in a long time.
Saying all this though - it's not all doom and gloom - just be aware of your surroundings (lush plants and ponds are mosquito havens) and have a great holiday. Dengue is a problem but millions of people holiday here with no problems.
