Hi, you will be able to cover a fair bit of ground in 3 weeks. I would obtain a good map of Bali and think about what you would like to do. There are many options and I will give you some ideas:
Uluwatu in the south is worth a visit and you can see traditional fire dance each afternoon from 5pm. Jimbaran Bay for seafood dinner on beach at sunset.
Travel up to Ubud and stay a few nights exploring the area, temples, rice terraces, traditional wood carving. Accommodation is affordable and good.
Travel up the centre through Bedugal to Munduk area for trekking, you say you would like to be off the beaten track - you will be at Munduk. Also explore Munduk falls.
Lovina for hot springs, and laid back beach side village.
Maybe catch the Scoot Boat to Nusa Lembognan for a night or two. Explore this island, the sea weed farming is very traditional. You could go to Gili islands also if you liked.
