Don't get rupiah before you leave home or you will lose money. You'll get a much better rate doing your exchanges once you get to Bali.
There's also no need to get US dollars before you leave home either. You can pay the VOA in Aus dollars (or most currencies), and any places that quote in US dollars will happily take payment in rupiah.
I've never used US dollars in Bali in 8 or so trips so far.
