in Ubud and it depends on what you are after.
The Casa Luna cooking school is pretty good - first time i did it was with Janet DeNeefe herself but last two times was with Balinese cooks. Enjoyed this classes when larger as there was a mix of people and was interesting to chat with and see other peoples reactions to the foods and prep styles. Good menu was listed but hands on cooking is limited due to class numbers.
Cafe Wayan does one at the Lake Leke restaurant and this one is good - smaller classes and more hands on cooking in a nice locations.
Also did the Warung Enak one which is less traditional as it is done in the restaurants flash kitchens but the food was great. This one also included morning visit to the markets.
All have decsriptions on their websites.
