Wi Fi works perfectly at lots of places on the iPhone.
But you MUST make sure the Data Roaming is off.
Settings-- General... Network...... Data Roaming ..... OFF....
If it is on-- you will end up with a bill that will cost more than your holiday.
I don't know about taking the sim card in and out, but I take my iPhone to receive text messages and to use for Internet on WiFi.
And then take an old phone - buy a Bali sim card to use for calls home or calls in Bali or text messages. Much cheaper way to go.
