Actually Mozaic is not everyone's cup if tea, many think it highly over-rated, excellent PR about the myth of always being fully booked [just ask any ex staff], although at this time of the year all top restaurants are booked out. In Ubud there is a small number of top end restaurants [and many great mid level ones]:

CasCades at The Viceroy has the most magic setting, particularly if you get there just as the sun sets and the monkeys are squabbling for sleeping space in the trees across the river. Young Chef Wayan was the 'no.1 for taste' in his many years working at Mozaic in its early days when Chris Salans was actually in the kitchen.

Lamak, the wonderfully designed [by ex Aussie Micheal White who is now Made Wijaya] classic restaurant with its French-Asian cuisine, probably one of the most professionally managed in Bali and easily has the greatest cocktail bar..all class!

Minami is unique, the cuisine of Osaka Japan, very different and quite delicate as compared to what is found in the normal suburban Japanese restaurant. Unusual Sake cocktails.

Glow at Begawan Giri was one of Bali's best two restaurants [along with Kura Kura at The Oberoi] but now their very talented chef Chris Miller has gone to join fellow Australian David Thompson at the new Nahm at The Metropilitan in Bangkok, so not sure what the current standard or style is?
