I have used baby sitters in bali for going out in the evening previously and have been very happy with them, they sat in the room reading by a lamp while we were out. maybe meet them before hand and dedcide if you feel ok w that person. we also left them a mobile number and emphasised that if there was a problem they must call and they would still get paid and they would not get in trouble. you might want to get hotel staff to help explain this.
re dengue - I plan to take a mosquito net over the cot, plug in repellent for the room and repellant on the clothes in the day.
have a lovely holiday.
