Two ways you can do it.
Apply for a letter of Authority which is basically a pre approved visa and the pay your VOA when you arrive in Vietnam.
There are quite a few companies that do this as a business (virtually middle men).
We chose to download the visa application form from the Embassy's website, from there you have to ring the Embassy and ask how much your particular visa will cost(why they can't put prices on their site is beyond me).
In our case we applied for a 30 day tourist visa at a cost of $75 per person.
We then had to send our visa application forms with a passport photo attached, passports, prepaid return express mail envelopes and a $75 money order for each application to the Vietnamese Embassy in Canberra.
We posted it on Monday express mail and got it back on Friday.
Job finished, no more dramas on arrival just show and go.
