defintely go white water rafting... i refused to do it but was convinced by my boyfriend...
once it finished I wanted to go again!! so much fun (i was 21 at the time)
also the safari park is amazing. you can ride elephants and hold orangutans and pat lions/tigers. safari park was definitely our most memorable day. i think it costs about AU$50 to get in but defintely worth it!! (bring your camera!)
