Quieter times are ok for winging it at different accomodation.
August- November is usually booked out so there is a need to prebook.
Also depends on your length of stay in Bali.
Sounds like you are on the right track for the rest.
There are many quiet beaches on Bali also, depends were you are going.
I am 55, have been to Bali 43 times and still each trip is different, new places to discover etc. Lombok, lembogan, Gilli islands etc.
