You will probably be asked to pay to bring in the excess alcohol. This will more than likely be through the "assistance" of a customs officer who will have a very good idea of how much the alcohol cost you. My guess would be the "tax" will be in the vicinity of the original cost, which will still put it below replacement cost in Bali. You may choose to try and negotiate the "tax" payable or you can forfeit the excess. Discussions re excess alcohol or cigarettes generally take place in an office, not in the open customs area. Don't forget if there is more than one of you, you can each bring in 1 litre.

I would not take a taxi to either Tanah Lot or Uluwatu, you would be better hiring a driver for a day or even a half day. A reasonable amount to pay for a day would be about 400,000rp or a half day about 250,000rp.
