I just had a look at the availability of the various privately owned apartments at the Jayakarta. Depending on when and for how long your are staying in Bali you can get accommodation. You might have to swap rooms during your stay, but it is do-able. We have done that in the past to get last minute accommodation.
As others have suggested you can ring a travel agent to get some accommodation. July may be difficult, but at other times you should have no problem.
