2 chicken,(chopped into pieces if you require), 1 tsp salt, 3 cloves garlic ,juice from 1 lime (can add black pepper altho this wasnt in the recipe) Spice paste : 3 red onions (large shallots),2 cloves garlic, 5 chilli, 1cm kencur (can use ginger or galangal, 4 candlenuts, ½ tblsp shrimp paste, juice 1 lime
Bone the chickens and rub with finely chopped garlic, some lime juice and salt and steam chicken until tender. Blend spice paste, then fry in a little oil until fragrant. Add the chicken and fry until skin is crispy.
