Nick describes getting it at Warung Mimpi in Seminyak (see link at the bottom).

I looked it up in the Balinese dictionary and sisit means a tear or fracture, so maybe chicken sisit is something to do with pieces of chicken torn off or some such.

I don't think it's sisig as dana thought because sisig means picking your teeth! But maybe that's what you do after the meal!
