If you want a particular style of shirt it's a good idea to either take a detailed picture OR take a shirt you like that can be copied. You want a yoke across the back, I'd say.
It is up to you to choose the fabric you want from what they have - if you don't like the range or quality, try somewhere different. I have used Janoko in the past but have found them to be too busy & really only interested in suits. Last November son took some black work pants to House of Komang in Jl Padma (NB closed on Sundays) to have 2 pairs copied. He was thrilled with the results (AUD$30 each) & surprised to get his original pants back. Without being asked they made one summer-weight pair & one heavier weight which was good thinking. Excellent quality.
There is a whole street of fabric shops in Denpasar. I think you'll find, though, that Komang will have something you like & if not you can always go to Denpasar (Komang will tell you how much material to buy for the work you want done). Son also wanted some stretch denim jeans copied - no such fabric in Bali but we were told which shop to go to in Perth, how much to buy & what the cost would be. Impressed.
