For paying the hotel, they will have an exchange rate for USD - Aussie, and will probably want to work out the variable rate on the day you arrive.
I have no doubt that you will be able to pay in AUD. (Say 50's) with perhaps any small adjustments in Rupiah.
The general rule for Rupiah is to change your dollars at a reputable changer in Bali.
Change say $50 at the airport money changers just for taxi and to get you started. (Some people rely on change from VOA when paid in AUD to get a small amount of rupiah)
