I am also on a gluten free diet and live here, Balinese Chefs find this one a little trickier than allergies to nuts etc. It seems to be a Western thing, they just can't understand it, they really find it strange that you can be allergic to it, although they understand nuts and dairy etc. She would know how to order at home, and that the sauces are the hardest things. There are plenty of salads etc available here, it's nearly impossible to get a Balinese chef to understand that there is gluten in a soy sauce so best to avoid any dishes with sauce, or get her to bring her own gluten free sauces from home. Lots of yummy things though, she will be fine, I don't go hungry, I whip my little bottle of gluten free sauce out at a restaurant all the time.
Most times they use rice flour as a thickener, but it's the manufactured sauces you have to be careful of.
