We usually just book the full extra day for the convenience of not having to be out at 6pm. Some hotels will let you stretch the 6pm out a bit but others won't. Since we stay in cheaper hotels anyway, it's no biggie to just pay the full extra day and then leave when it suits us - usually 8.30-9pm. That way we can go and enjoy dinner,and then have a last shower etc, before leaving straight to the airport.
