I should start with a disclaimer, I have not used mine overseas yet, but I have extensivly researched on the net how to use it without huge data charges in anticipation of my trip in May.

The following is assuming you are not going to take your australian sim out of your phone.
If you turn data roaming off under network settings, that is stopping your phone from using your australian sim card to try and connect to the internet when out of your carriers normal area, therefore stopping any data roaming charges whilst overseas.

Wifi will not incur any fees at all, you will need to have wifi setting turned to on and ask to join networks turned to on, this way when you are in an area that has wifi it will pop up and ask you if you want to connect.

I am personally going to take my optus sim out and use a local bali sim, much cheaper and no chance of data charges when I get home. I dont know if I will bother with a local sim that has data (internet), I will decide when I get there. I am waiting for confirmation that Optus has unlocked my phone so I can use another sim.

May I strongly suggest though that you talk to your local provider...optus, telstra etc, and do your own research to confirm what I have told you as I could be very very wrong. LOL
