Hi Nac
hope the Bali plans go well for you. I am also going in May and found many hotels were almost full when I tried to book, this time I am staying in Tuban with my family, it is the quiter end of town. The more expensive hotels probably don't sell out as quick as the dearer ones but it would pay tobook as Bali seems very busy these days. I saw in your previous post your budget of $100-$200 USD per night. I stayed last May at the Legian beach hotel LBH with some girl friends. I found it really central to walk to restuarants and shopping, across road to the beach and easy to grab a cab. It is not 5 star ( the rooms are pretty plain for the money but still nice) the best part was the location of the beach front bunglow we only had 10 steps and in the pool ($185USD per night with breakfast). They have nice pool and great sunset lounge area overlooking the beach, good bar staff played good music you cuold relax and watch the world go by over a feew cold ones. We also enjoyed afternoon's on the beach there. If you google the hotel name they have a website and you can book direct. If you like really upmarket full 5 stars you could try Jimbaran Bay or Nusa Dua but they are a bit more out of the way and most people say the food and drinks at these establishments are really expensive, say same as you would pay back home where as normally food and drinks in Bali are pretty cheap compared to Aus or US. The beach at Nusa Dua is nicer than Kuta/legian area. Seminyak has some great 5 star hotels too such as The Legian but cost is fair bit more than $200USD pn, not sure if you are travelling as single or couple but it looks great for a couple.
I hope you find something suitable and enjoy your break. Cheers
