I wouldn't stay at the hotel near the airport on arrival. Bali is a small place so I would definately have a room organised before I travelled.
If it is western type 5 star I would consider going to Nusa Dua where the high end hotels are all along the beach front -have a look at Google earth and you can see the hotels and pictures. There are water sports and shopping -its more expensive than Kuta all up but not a busy.
I would definately book via an online agency the price is a lot cheaper that fronting at the desk. Have a look at a few different agencies as the cost varies.
