There are a few areas that are popular in bali.
From what you mentioned Kuta, Legian, Sanur would be places you would like to stay in.
In Kuta I would recommend Inna Kuta Beach -nice hotel on the beach close to everything. If you book online at one of the discount travel places it will save you a lot. It has good pool, rooms, clean etc...
Nice meal -depending on your taste really -you can get great food for under $10 for a tasty meal or $100 for something in a more up market setting. Read the forum for restaurant reviews.
Taxis -A whole days tour around 6-8 hours will set you back $50 or under. A Bluebird taxi will cost you a couple of bucks to get you around the area close by, approx $10 to water sports from Kuta.There are cars that go around offering tours -barter for a good deal and they are great.
Money changers accept US dollars but I wouldn't be using USD for everyday use at shops. Just exchange what you need at a reputable money changer -Kodak shops are good but be the last person to actually touch and count your money.
Debit cards are fine for your accomodation and meals in larger restaurants but mostly its cash.
